lovely little recipe

Fruit Salsa + Cinnamon Sugar Tortilla Chips

This is one of my go to recipes. It's easy, fast, cheap, delicious, and doesn't come with the sluggish feeling I usually get after I feel indulged a little. It also can be personalized and switched around depending on what you have available to you.

What you will need:
Chips - Flour tortillas (I always use whole wheat), cinnamon-sugar mix, Butter or Baking Spray (I love Pam Baking Spray)

Salsa- It is totally up to you! I usually always use apples because they are a good filler. In this specific salsa I used fresh apple and nectarine, frozen peaches and strawberries, and canned crushed pineapple. You will also need something for a base such as orange juice or fruit preserves. Be careful when using orange juice or oranges because they will quickly become the dominate flavor. Use sparingly.

Cut the tortilla into triangle shaped pieces (pizza cutter works best) and arrange as many as can fit onto baking sheet.  Coat the tortilla with butter or spray and sprinkle cinnamon- sugar mixture on top. You end up losing a lot of the cinnamon-sugar so you can feel free to get a bit carried away here.

Bake the tortilla at 350* for 8-10 Minutes. While you are doing that you can begin to cut up your fruits. I like to keep mine in decent size pieces still so that people can tell what kind of fruit it is.

Mix all your fruit together and then add your base. I always wait till the end to do this because the fruit will create a natural base and you want want it to be too runny. Feel free to add sugar if you think it needs it but I never do.

Ta-da! You will get so many compliments on this recipe! So easy and unique for the summer. I always make more chips than needed because people will eat them without the salsa too. I keep the back-up chips in the tortilla bag they came in and bring them in case they run out.

I hope you enjoy!
